Restaurant servers earn a base wage (varies by state) plus tips. Delivery drivers earn $2-4 base pay per delivery in most markets — the tip is the majority of their income. When you tip $0 on a delivery, the driver earned $2-4 for 15-30 minutes of work including driving to the restaurant, waiting for your food, and driving to your door.
This is not an opinion — it is how the gig economy pay structure works. Tips are effectively the driver's wages.

When a DoorDash order comes in, the driver sees: restaurant name, distance, and estimated total pay (base + tip). A $15 order with $0 tip shows as "$2.50 for 4.2 miles" — most drivers decline. The same order with a $5 tip shows as "$7.50 for 4.2 miles" — accepted quickly.
DoorDash hides tips above a certain threshold (varies by market, usually $4-5). So a $4 tip and a $10 tip may show the same estimated pay. But after delivery, the full tip is revealed. This means very generous tips reward the driver but do not necessarily speed up acceptance.
Instacart shoppers do more than delivery drivers: they drive to the store, walk the aisles finding your items, communicate about substitutions, check out, bag everything, drive to your house, and carry bags to your door. A 40-item order can take 45-60 minutes of shopping plus delivery time.
Minimum tip: $5. For large orders (30+ items), heavy items, or multi-floor apartments: 20%+ or add a flat bonus. Many Instacart shoppers say $7-10 is the sweet spot for a standard 20-item order.
